Can some tell me some good recipes to cook fish ??

As you can tell by my measuring system, I am not a by-the-book cook... but here are some simple recipes I follow... more like guidelines:





1. Steam it. (smaller fish)





Mix together a little bit off olive oil, garlic, parsley, and white wine. Just enough to cover the bottom of a saucepan. Maybe some salt, pepper, vinegar OR lemon juice (but not both!).





Put a saucer in the pan. Criss-cross a few chopsticks on the saucer, and lay a few fish fillets, flat on the chopsticks.





Cover the saucepan and cook, medium heat, for like 10 minutes.





I've been successful cooking Tilapia, Whiting, and Yellowtailed Red Snapper using this method. I'm sure other fish will work too, but I haven't tried them.





2. Broil it. (Big Fish)





I'm using a ';measurement'; of one fish steak per person... so that's the size convention here.





Cut up one large onion, and one large green/red pepper, for every two fish steaks. Line the bottom of a regular flat Aluminum baking pan or whatever that thing is called. You know what I'm talking about. The flat one.





Drizzle some oil over the peppers and onions so that they dont stick to the pan.





Now lay the fish on top of the peppers, so that THEY dont stick to the pan. Broil it at 420, for 15-20 minutes.





Works well with Salmon, Bluefish and Tuna.

Lemon Pepper Dill Fish





INGREDIENTS


1 pound haddock fillets


1/2 cup butter


dried dill weed to taste


lemon pepper to taste


3 tablespoons fresh lemon juice








DIRECTIONS


1) Place fish filets in a microwave-safe dish. Cut butter into pieces and place all over fish. Sprinkle with dill weed and lemon pepper. Drizzle fresh lemon juice all over the fish.





2)Cover and cook on high for 3 to 5 minutes or until the fish turns white.

For basa (like catfish), just sprinkle it with a lemon pepper seasoning and grill on the BBQ.





For Maple Glazed Salmon Steaks marinate with:





4 salmon steaks or fillets





3/4 cup maple syrup


2 tablespoons packed brown sugar


2 tablespoons ketchup


1 tablespoon cider vinegar


1 tablespoon Worcestershire sauce


1/2 teaspoon salt


1/2 teaspoon mustard powder





Mix marinade ingredients together, pour into a large plastic zip-lock bag, add salmon. Make sure all the salmon is coated. Marinate in the fridge for about 3 hours, occasionally turning the bag.


You can BBQ or bake in the oven


Delicious.
It really depends on what kind of fish you are making.


Some fish is better baked, or others grilled or fried.





Here is my favorite way to make fish. I use either snapper or tilapia, usually, but sometimes the price of fish warrants other. But whatever your favorite is should work.





4 whole scaled and cleaned small fish or fillets, your choice


1teaspoon salt ground black pepper


1 hot pepper, seeded and fully chopped


Juice of two limes


Flour for frying


Oil for shallow frying


1 chopped onion


250g/8 oz tomatoes, skinned and chopped


Salt and black pepper


Method:


Wash fish well, under running water and pat dry with absorbent paper. . Salt and pepper sprinkled over the fish. Place fish in a shallow bowl and pour the lime juice over the top. Cover and leave in a cool place for hours to marinate. Remove fish from bowl, and dust well with flour. Heat oil in a large frying pan and fry the fish until crisp and golden on both sides, turning once during cooking. Remove and drain on absorbent kitchen paper. (Keep warm) Pour off most of the oil and fry the onion in the oil left in the pan. When the onions are soft, add tomatoes and chopped hot pepper and simmer until thickened. Add the reserved marinade and bring to a boil. Reduce the heat, add the fried fish and simmer for five minutes Season to taste and serve with lime wedges, pepper and rice.
FISH TACOS!!! Take your fish (usually a white fish) Dredge it in cornmeal that has a bit of spices in it, and lightly fry it in oil until golden. Squeeze some lime and serve in a tortilla with cilantro, lettuce, avacado, salsa or a creamy chipotle sauce. Beans and rice are a good company for this dish.

Just get some rubs to have on hand - Cajun, Western, whatever. Rub on the rubs, and grill (inside or out) the fish.

BAKED SOLE WITH LEMON SAUCE


Yield: 4 Servings





2 lb Sole, Fresh or Frozen


1 ts Salt


1/4 ts Pepper


3 tb Butter


2 Egg Yolks


1 tb Water


1 tb Flour, All-Purpose


3/4 c Chicken Broth


2 tb Lemon Juice


1 Green Olives, Stuffed





Pre-heat oven to 350酶F. Grease a large shallow baking dish. Arrange


fillets in dish. Sprinkle fillets with salt and pepper. Dot with 2 T


butter. Bake for 10 minutes or until fish flakes easily when tested


with a fork. Start sauce preparation about 15 minutes before you put


the fish in the oven. In a cup, mix egg yolks with water, set aside.


In heavy saucepan over medium heat, into 1 T of hot butter, stir


flour until well blended. Gradually stir in chicken broth and lemon


juice. Cook with stirring until mixture is thickened. Remove saucepan


from heat. Into egg yolks, stir 6-8 drops of Tabasco Sauce. Slowly


pour egg mixture into sauce, stirring rapidly to avoid lumping. Cook


with stirring until thickened (DO NOT BOIL). Spoon off any excess


liquid from fish. Pour sauce over fish and garnish with sliced


stuffed green olives.














Oven Fried Ocean Whitefish Parmesan





1 pound ocean whitefish fillets*


2 tablespoons cornmeal


1/4 teaspoon paprika**


salt and pepper to taste


2 tablespoons flour


1 tablespoon grated parmesan cheese


2 teaspoons vegetable oil


Cod, Rockfish, Perch, Sole, Flounder, Orange Roughy, etc. *Could substitute spice of choice, such as Cajun Herbed Spice mix.





Combine cornmeal, flour, cheese, paprika, salt and pepper.





Dredge fish in cornmeal mixture. Spray baking pan with non-stick coating.





Arrange fish in pan and drizzle with oil.





Bake at 450F 8-10 minutes or until fish flakes.




















CAJUN BLACKENED SPICE MIX %26amp; BLACKENED FISH


Yield: 1 Servings





1 tb Paprika


2 1/2 ts Salt


1 ts Onion powder


1 ts Garlic powder


1 ts Cayenne pepper


3/4 ts White pepper


3/4 ts Black pepper


1/2 ts Thyme


1/2 ts Oregano


1/4 ts Sage


-White fish fillets


-Vegetable oil





Mix all spices together and store in a tight jar. Heat 1 tablespoon


vegetable oil in cast iron skillet on medium high heat until very


hot, but not quite smoking. Rinse fish fillets and pat dry with paper


towel. Rub a little oil on both sides of the fish and sprinkle spice


mix on both sides (generously, if you like it hot). Sear the fish in


the hot oil for about 1 minute. Flip it and cook the other side. If


the fillets are thick, you may need to lower the heat and cover to


fully cook the fish. Serve with lemon wedges.

















HERB STUFFED SOLE


These sole fillets are stuffed with an herb mixture and baked in a buttery lemon sauce.





Preparation 20 min.


Baking 25 min.





Stuffing Mixture %26amp; Fish Ingredients:





1/2 cup crumbly-style seasoned stuffing mix


1/4 cup chopped fresh parsley


2 tablespoons LAND O LAKES庐 Butter, melted


1 teaspoon freshly grated lemon peel


1 (16-ounce) package frozen sole fillets (not breaded), thawed, drained


Sauce Ingredients:





1/4 cup LAND O LAKES庐 Butter, melted


1 tablespoon lemon juice





Instructions:





Heat oven to 350掳F. Combine all stuffing mixture ingredients except sole fillets in medium bowl. Place 1 tablespoon stuffing mixture in center of each fillet. Wrap each fillet around stuffing mixture; secure with toothpicks.





Place stuffed fish into ungreased 8-inch square baking pan; sprinkle with remaining stuffing mixture.





Combine all sauce ingredients in same bowl. Pour over fish. Bake for 25 to 30 minutes or until fish flakes with a fork.





Yield: 4 servings
