Chinese Simple Appetizer of Pecan Pieces


* 1/4 teaspoon of hoisin sauce


* Fresh lettuce


* Pecans


- Toast shelled whole pecan pieces in a 350 F (180 C) oven for about 10 minutes.


- Cool them to room temperature


- Spread hoisin sauce (to taste) over iceberg lettuce


- Wrap 2-3 pecan pieces in the lettuce leaf








Spiced Cashew


* 3/4 lb cashew nuts


* 3 spring onions, sliced


* 5 thai chilies, sliced


* 1/2 tsp sea salt


* 2 cups vegetable oil


- Place the oil in a wok over medium heat.


- When the oil is hot add the cashews and fry until golden. Remove and drain


- Toss the cashews with the spring onion, chili and sea salt.





Salmon Bruschetta


* french bread, the fresh one


* 2-3 tbsp of ketchup


* 1 1/2 tbsp of low fat mayo


* salted margarine as needed


* 1 can of pink salmon, drain


* mozzarella cheese, grated, as needed


- Slice french bread, not too thick and not too thin.


- Spread amount of margarine on each slices


- In a bowl, combine the rest of ingredients well


- Spread the mixture on top of the margarine


- Sprikle some grated cheese on top of the mixture


- Grill 'on toast' for about 10 minutes or until cheese melted and browned a bit.





for main meals, try one of the following


Fettuccine Alfredo


8 oz dry fettuccine pasta


1 cup butter, softened


1 cup cooked diced chicken breast


1/2 cup grated Parmesan cheese


freshly ground black pepper





Cook pasta according to package directions. Drain.


Stir in butter or margarine, chicken breastand toss with grated cheese.


Season with freshly ground black pepper.


Makes 4 servings.








Scalloped Potatoes


* 1 1/2 lb potatoes-sliced thinly lengthwise a wiped dry


* 2 cloves garlic


* Butter


* Salt


* Milk


* Cream


Rub a large gratin dish with garlic (earthenware will take the garlic better) or put the peeled cloves through a garlic press, rubbing the pure and juices all over the sides and bottom of the dish and discarding any solid debris that remains. Let it sit for a few minutes until the garlic has dried and is no longer tacky to the touch.





Butter the dish liberally and pack the potatoes in lightly salted layers. Barely cover the potatoes in milk and bring to a simmer on the top of the stove (if using an earthenware dish, protect it with an asbestos pad underneath). Dribble a thin layer of cream over the surface, dot with thin shavings of butter, and bake at 375-400 for about 45 or 50 minutes, until the liquid has been absorbed.


Serves 4 to 6





Bacon %26amp; Egg Casserole


* 6 eggs, beaten


* 6 slices of bread, cubed


* 1 c. Cheddar cheese, grated


* 1 lb. cooked bacon


* 2 c. milk


* 1 tsp. salt


* 1 tsp. dry mustard


Butter casserole dish. Lay cooked bacon on bottom of casserole. Add remaining ingredients together. Pour over bacon. Cover and refrigerate for 12 hours. Bake in 350-degree oven, covered, for 1/2 hour. Uncover,


and bake 45 minutes more. Serves 6.

Steam some brocolli and drizzle with some butter and lightly sprinkle parmesan. Flavors all meld and that is a yummy and EASy dinner for guests.

Easy Beef Taco Bake





Ingredients:





1 lb. ground beef


1 can (10 3/4 oz.) Tomato Soup


1 cup Chunky Salsa OR Picante Sauce


1/2 cup milk


6 (8';) flour tortillas, cut into 1'; pieces OR 8 (6';) corn tortillas, cut into 1'; pieces


1 cup shredded Cheddar cheese (4 oz.)





Directions:





COOK beef in medium skillet over medium-high heat until beef is browned, stirring to separate meat. Pour off fat.





ADD soup, salsa, milk, tortillas and half the cheese. Spoon into 2-qt. shallow baking dish. Cover.





BAKE at 400掳F. for 30 min. or until hot. Sprinkle with remaining cheese.

here is one for roast beef quick and easy


INGREDIENTS


1 1/2 teaspoons seasoned salt


1 teaspoon garlic powder


1/2 teaspoon onion powder


1/4 teaspoon cayenne pepper


1 (4 pound) beef rib roast


1/2 cup butter or margarine, cubed


DIRECTIONS


Combine the first four ingredients; rub over roast. Place roast, fat side up, in a roasting pan. Dot with butter. Bake, uncovered, at 350 degrees F for 1-3/4 to 3 hours or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F medium, 160 degrees F; well-done, 170 degrees F). Let stand for 10-15 minutes before carving. Thicken pan drippings for gravy if desired.

Best lamb cutlets with special basil sauce


Serves 4





鈥?12 lamb cutlets


鈥?a small handful of fresh thyme, leaves picked


鈥?extra virgin olive oil


鈥?sea salt and freshly ground black pepper


鈥?400g mushrooms, brushed clean and torn


鈥?a small handful of fresh flat-leaf parsley


鈥?1 lemon


鈥?2 handfuls of pinenuts


鈥?2 large handfuls of fresh basil


鈥?3-5 tablespoons balsamic vinegar





This dish is fantastic and you can literally have it ready in just over 5 minutes. Use either wild mushrooms that are in season, like girolles, trompettes de la mort and pieds de mouton, or more readily available farmed mushrooms like field, chestnut or oyster, as these are really tasty when cooked properly.





These lamb cutlets are best cooked on a hot barbecue with wood or charcoal, to give you a wonderful smoky flavour. Otherwise use a preheated ridged griddle pan. Slap the cutlets with the heel of your hand to flatten them slightly. Then bash up your thyme in a pestle and mortar and add a little olive oil. Mix together, then rub the oil over the cutlets and season both sides of them. Put to one side.





Cook the mushrooms dry on the bars of your hot griddle pan. This is quite an unusual way to do it, but it gives you a nutty flavour that you wouldn鈥檛 get otherwise. Just grill them on both sides to mark them and put them into a large bowl. Once the mushrooms are done you can put the lamb on the barbecue or griddle pan. If the cutlets are about 1.5cm/戮 inch thick, just give them 3 or 4 minutes on each side until they鈥檙e really golden. This should cook them medium. (To be honest, I鈥檓 not really into rare lamb cutlets, but if you prefer them like that then cook for a little less time.)





When cooked, put the lamb cutlets into the bowl with the mushrooms and drizzle with a little olive oil. Tear over the parsley, in quite large pieces, and add a good squeeze of lemon juice. Season lightly and toss around. Place to one side to rest, to allow all the lovely juices to get sucked up by the mushrooms.





Meanwhile you can make a really quick sauce. It looks a bit like pesto, but although it contains basil and pine nuts it has no similarity in flavour. In a pestle and mortar pound up the pine nuts until you have a mushy pulp 鈥?this will give the sauce a creamy flavour and texture. Remove the mixture to a bowl, then use the pestle and mortar to bash the basil up into a pulp. Add this to the pine nuts and loosen with extra virgin olive oil so that the sauce easily drops off the end of a spoon. Now you need to balance it with quite a lot of balsamic vinegar to give it a good zing, almost like a mint sauce, but add it to taste. Give the lamb and mushrooms a final toss. I like to serve this up on a big platter and let everyone help themselves. Have the sauce and a simple watercress salad on the side.











Elvis Burger with chopped salad and pickled gherkin


Serves 4





鈥?1 dried red chilli


鈥?陆 a red onion, peeled and finely chopped


鈥?a sprig of fresh tarragon, leaves picked and chopped


鈥?1 large free-range or organic egg


鈥?a handful of breadcrumbs


鈥?1 teaspoon Dijon mustard


鈥?2 tablespoons freshly grated Parmesan


鈥?a good pinch of ground nutmeg


鈥?1kg beef mince


oil, for frying


鈥?salt and freshly ground black pepper


鈥?1 cos lettuce


鈥?4 plum tomatoes


鈥?1 cucumber


鈥?4 ciabatta rolls


鈥?4 large pickled gherkins








Parmesan cheese may seem a little unusual in this recipe, but it really gives the burgers a great flavour 鈥?give it a bash.





Grind up the red chilli in a pestle and mortar, and mix it in a bowl with the onion, tarragon, egg, breadcrumbs, mustard, Parmesan, nutmeg and beef. Shape into four patties and refrigerate for half an hour or so to give them a chance to firm up slightly.





When you're ready to cook the burgers, get a frying or griddle pan nice and hot. Brush the pan with a little oil, season the burgers generously with salt and pepper, and cook them for 10 minutes, turning them carefully every minute or so, until they're nice and pink and juicy, or longer if you like them well done. Make sure they don't break up as you turn them.





Meanwhile, roughly chop the lettuce, tomato and cucumber, mix together and set aside. Once the burgers are cooked, split the rolls into two and toast them quickly on the griddle or in a toaster. Sandwich the cooked 'Elvis' burger between the toasted rolls and serve them on individual plates with the gherkins and some of the chopped salad (add a little extra virgin olive oil or dressing if you like) on the side.








Beef Stroganoff





Ingredients


Olive Oil 1 tbsp


Beef Steaks 750 gm Diced


Onion(s) 1 litre Finely chopped


Freshly Crushed Garlic 1 tsp


Smoked Paprika 1 tsp


Dijon Mustard 1 tbsp


Chicken Stock 1 cup(s)


Tomato Paste 1 tbsp


Mushrooms, button 250 gm


Light Sour Cream 3/4 cup(s) 175ml


Chives (Fresh) 2 tbsp Sliced





Recipe Directions:





Heat the oil in a large saucepan over medium heat to high heat. Cook the beef for 4-5 minutes. Add the onion and cook for 2-3 minutes.


Stir in the garlic, and Smoked Paprika and cook for 1 minute. Add the Dijon mustard, chicken stock, tomato paste and mushrooms. Bring to the boil and simmer for 10 minutes.


Stir the sour cream and chives through.


Serve with pasta noodles, or baby herb potatoes and green salad.
You don't impress me. Try Schwans or another food provider that delivers prepared easy to cook meals. The former makes a dinner biscuit to die for and their ice cream is fine also. Show me what you're made of away from Wal-Mart.

Cooking is one of the easiest and fun things to do. Its like riding a bike for the first time if your not used to it though...your always scared at first, but once you stop worrying and have fun with it, its easy !!! Piece of advice...if it looks/sounds like its gonna be good, it WILL be !!! Its food...all food is good...mix and match, have some fun with it, and you can end up creating something REALLY delicious!!

Get a piece of bread. Toast it. Dice some onions, peppers, and garlic, if possible. Fry the veggies in olive oil. Add a little salt, pepper, and other desired spices to the veggies. Put the veggies on the toasted bread and sprinkle shredded cheese on the hot, steaming vegetables. If necessary (to melt the cheese), you can microwave it a little or heat the cheese + veggies + bread on a heated skillet or pan for a few minutes, being careful to move it when the cheese melts. Put the other second piece of toasted bread on the ';sandwich.'; Flip it over and open it. Sprinkle hot sauce or some sort of sauce on the other side of the veggies and/or more spices and/or more cheese. Close it and try it yourself to judge the ingredients and their amounts for your taste. Add other veggies or types of cheese for more varied tastes. Maybe add vinegar to the sauce. Make sure you like the taste before you make someone else eat it. When serving it. Cut it into wedges or squares and make it look appealing.

chicken pieces marinaded in 4 tablespoons of soy sauce, crushed garlic,grated ginger and 2 tablespoons of sugar.


stir fry with chopped veg broccoli,mangetout,sliced carrot and a packet of noodles heap onto a big plate and let everyone serve themselves.Yummy and simple.
u can make corn chat. just buy some corn seeds and boil them in a pressure cooker (without adding water in the corn vessel) for three whistles. add butter, salt, black pepper powdered and a pinch of black salt. a little bit of lemon juice would do the wounders. toss it well and garnich with fresh corriender leaves.
Start off with easy stuff, get some of thos frozen stir fry packages at the grocery store, they are very easy to make, just follow the directions on the package. Usually just need a stove, a pan of some sort, a little cooking oil, and follow the directions they give you. You'll be amazed how well it turns out. Dont get flustered, just take it slow and 1 step at a time. use a timer to make sure you cook for the specified time, it will turn out just fine.





After you feel confortable with the simplist things like that, then you can start making things like grilled cheese, pancakes, scrambled eggs.
