i cook it in a Hungarian fashion.


its shredded and sauteed with some onion and garlic, salt and pepper.


then its thickened with a roux


and sour cream, a little vinegar and dill are added as well as paprika.

cut in half length wise.





sprinkle with sugar substitute (or a little brown sugar)


and butter (margarine)





cook in a microwave safe dish until tender








or





cut in slices, scramble an egg and add a little milk or water.





put the slices in the liquid.





put some corn meal or flour or a mixture of the twoo in a bowl.





dip the slices in the mixture.





Heat oil in a skillet.





place the slices in the skillet and fry them. (until tender)








or





steam in a steamer with seasonings you like.
Brush with teriyaki sauce and bake'Til tender crisp.
The easiest way would be to saute it in either some butter or a bit of olive oil over medium heat under tender but not limp. Add whatever spices you think might be good. Fresh or dried basil or tarragon is nice.
Zucchini is one of those vegetables with a bland flavor. The upside is it is good eaten raw, and when cooked with other flavorful things, onions, garlic or a variety of seasonings, it taste different with each variation.

Quarter it, marinate in Italian salad dressing for 20 minutes, and grill till you see grill marks. Or slice 2 med. zucchinis aprox. 1/4'; thick and saute with 3 cloves of crushed garlic, 1/3 cup olive oil, 1large vidalia onion sliced and 1 and 1/2 cups of crushed plum tomatoes. Cook over low to medium heat for roughly 15 minutes or until zucchini starts to turn tender(not mushy). Salt and pepper to taste.
I dip in egg and coat with bread crumbs and saute in butter. Delicious!
There are several ways to cook zucchini, one is to hash it up with some diced onion in a fry pan with butter until golden brown, the other way if the zucchini is big around enough is to cut it up into dollar size and dip in egg and then flour and fry it until dark brown, either way I like them both.
I slice and broil in the oven with lots of spices on top: yummy!!! :) If you broil them long enough the slices come chip like: great snack!


I also slice them thin and make mock-pasta!
Try this. Cut Zucchini into bite size peices. Coat Zucchini with some egg wash, then roll in Italian flavored breadcrumbs. Bake at 350 for 25 minutes,
put the zucchini on a grill and eat it
you could cut in half like in the middle longways then put salt pepper and butter wrap in foil and cook in the grill until really warm then eat they are the best way to make zuccini
My family enjoys it when I slice it in half lengthwise, pour a little olive oil into a plate, let the zucchini soak up the oil for about 30 minutes or so, then grill. I place the zucchini around the outside of the grates so it doesn' t burn up, then after it cooks on both sides until tender, I sprinkle with salt and pepper. Another way I cook it is to soak it in olive oil for a while, then sautee over low heat in skillet -- same principle as the grill, then sprinkle with salt and pepper.





My mother in law likes to slice it into rings, dip in egg and milk, then dip in corn meal, and fry in vegetable oil. It's very good this way, too.





One more suggestion is to not cook it at all, but cut into strips and dip in blue cheese or ranch salad dressing. You could also slice into bite size pieces and put in a loaded salad ... yum!
Steam it and then add I Can't Believe It's Not Butter (in the squeeze bottle) and then some Mrs. Dash (Garlic %26amp; Herb blend tastes the best).
Just plain zucchini





Wash and slice the zucchini. Put 3cups of water in the bottom of a steamer. Put the zucchini slices in top of steamer. Don't forget the lid. Bring water to a boil. Turn of heat. I live at a high altitude so it take about 14 minutes for the zucchini to become tender.


Serve with a little seasoned pepper.





If you do not have a steamer. Put the zucchini directly into some water in a sauce pan with a lid. Bring to a boil put lid on pot. Turn off heat.... serve when tender.
oooh, slice it up in rounds, and saute them in a skillet with melted butter and a bit of onions, or chives - YUM!! But be careful not to burn the butter. Low heat. Stir until soft but not mushy. Enjoy!
