huevos con chorizo tacos

quesadillas(flour tortillas w/ quesadilla cheese melted)

sub sandwiches with salad

salad topped with ham, cheese, bacon, lettuce, tomato, red onions, hard boiled egg (sliced), and croutons! :) the salad alone will be very filling!
EASTY %26amp; TASTY : - have fun.

rice crispy chicken tenders with dipping sauce. Just coat the tenders with beaten egg, dip into crushed rice crispy cereal then bake for about 25 minutes on 350 degrees.

Dip in sweet %26amp; sauce (use whatever you like for this) - can be as simple as some honey %26amp; mustard, or teriyaki with marmalade...use your imagination on this part --- almost can't mess it up.

ps: why is mom having you cook until the next pres is elected?
Nice big pot of chili.

Or spaghetti and meat balls, or a meat sauce

Burgers

Pancakes/waffles/french toast
spaghetti is a really great option. if you like salads, they're good too. but the easiest things to cook are pancakes and waffles.
Try Fajitas, they're easy to make, fry the chicken add the spice, put in a wrap add salsa etc.

I found this easy recipe online for a chicken dish:

INGREDIENTS

2 eggs, beaten

1 cup crushed buttery round cracker crumbs

1/2 teaspoon garlic salt

ground black pepper to taste

4 skinless, boneless chicken breast halves

1/2 cup butter, cut into pieces

DIRECTIONS

Preheat oven to 375 degrees F (190 degrees C).

Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper. Dip chicken in the eggs, then dredge in the crumb mixture to coat.

Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.

Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear.

pasta

Here are a few easy ones.

1) In a pan put a can of cream of mushroom (or any cream of what ever soup), can of canned meat (tuna, chicken or salmon), a little water to thin the soup out and some frozen veggies (your choice, I like peas in this). Warm it up. You can put this on top of toast, rice or noodles. Takes about 15 min or so to cook if you do noodles.

2) Cook some pasta (not spaghetti or long pasta, you want bite sized), chop up some fresh veggies. Once the pasta is cooked run it under cold water to chill it. Mix the chopped veggies and pasta togeather with a little dash of olive oil. This is great for a hot summer day! This one takes around 15-20 min and is healthy.

3) Hard shell tacos can be easy. Get the packs that sell the taco shells and the meat seasoning. You should use about 1/2 lb of ground beef for 4 people. Fry ground beef (Salt and pepper a little for flavor) and add the seasoning from the pack. Chop some lettuce, tomatoes, green peppers and grate some cheese (add other toppings your family may like). Put each ingredient in their own bowl (don't mix them!). Serve meat hot. Easy and good!

Just saw the add... if your mom is allergic to garlic and onions check any packaging that I suggested for easy meals. You can usually omit those two ingredients without too much hassle or change in the taste of the meal. Good luck!
if your mom says it's ok, go to http://www.heykidsletscook.com/ and pick a recipe. Just make sure Mom says it's ok to use sharp kitchen tools and the stove or microwave.

My kids make some kind of tacos/taco salads on Tuesdays and we have make your own pizza night on Fridays.

They also love tater tot casserole, as it is EASY

1 pound browned hamburger

1 large can cream of mushroom soup

1 bag frozen green beans

1 bag frozen tater tots

1 bag shredded cheese

Layer everything in order except the cheese. Bake in 375F preheated oven for 20-30 minutes until tots are done. Sprinkle cheese and bake another couple of minutes until cheese is melted. Serve with green salad.

Also chicken enchilada casserole

1 pkg corn tortillas, 24 count

2 large chicken breasts, cooked, chopped or shredded [use leftovers] about 3-4 cups

2 large cans of enchilada sauce

1-2 packages of shredded cheese, about 1 pound

1 can rinsed, drained black beans

Preheat oven to 375F.

Layer all the ingredients starting with a couple spoonfuls of sauce, then the tortillas in a very large baking dish until you either run out of room or ingredients. Make sure the cheese is the top layer.

Bake for 30 - 40 depending on your oven. Very yummy. Serves 10.

Tuna Casserole

3 small cans tuna

1 large can cream of chicken mushroom

1/2 bag frozen peas

one box of noodles, I like shells for this

1 bag of shredded cheese, optional

1/2 c. breadcrumbs, optional

Boil noodles and peas together until noodles are done.

Drain. In the same pot, pour in the tuna and soup. Heat thoroughly. Add noodles and peas and cook about 1-2 minutes until heated. Serve with breadcrumbs and cheese for traditional flavor.
