My dad has been diagnosed as borderline type 2 diabetes, and he has both high cholesterol and high blood pressure. We have improved our eating habits before this news (multi-grains, light butter, low caffeine drinks), but our biggest obstacle wil be on eating low carb, and not frying meats as much. Could anybody help me out?

a really good source of recipes that satisfy your diet needs are contained within the Weightwatchers program. Their recipes for the most part are diabetes supportive (dont violate diabetes meal rules). Eat at least 5 servings of fruits and vegetables. Salad is always a great addition to most meals.
try steaming meals or using a wok, as the oil use is minimal and the flavors are great. try mixing some protein in a typical green salad. Use Chicken, pecans, celery, and seedless grapes with some Green apple slices on top of lettuce or mesclun mix with raspberry vinegrette for a variation of chicken Waldorf Salad with less calories as one example.
