GARLIC LEMON BUTTER SAUCE
1/2 c. butter (1 stick)
2 tbsp. lemon juice
2 cloves garlic, crushed
Parsley, chopped
Salt and pepper to taste
1/8 c. Romano or Parmesan cheese
Combine all ingredients and stir until well blended.

after pulling fish out of skillet add white wine reduce then lemon juice and finish with a pat of butter whisking. You may add capers if you like them.

I cook mine with a little olive oil, garlic, tomato, fresh basil all wrapped in a piece of tin foil. I use this method with all different fish. Always turns out moist and refreshing.
My favorite way:
Fish Fillets Florentine
One 10 oz pkg. frozen, chopped spinach
1 lb fish fillets
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup freshly grated parmesan
salt and pepper to taste
Defrost spinach and squeeze dry.
Place in covered microwaveable dish, dot with butter and cook two minutes, stirring once.
Spread spinach in greased rectangular baking dish. Arrange fillets of sole over spinach in single layer. Sprinkle with salt and pepper. Mix remaining ingredients and spoon over fillets. Bake in preheated 500 degree oven for 10 to 12 minutes until fish flakes when tested with a fork. Remove from oven and allow to stand for 5 minutes.
