Leek and cheese white sauce for boiled corn beef. Boil Corn Beef 30 min first 500 grams 20 min every 500 gram there after or to own taste. I like my Corn beef cooked so it slids off fork easily when put into it.
Wash leeks thoroughly by soaking and when preparing look for dirt between top of leek layers. Cut into even slices thick or thin your choice. Cover with water bring to boil add butter/margarine, salt, pepper and small amount of hot mustard to taste. Lower heat to a simmer add milk to double amount in saucepan then add 4-6 Kraft, No name cheese slices and mix about 1.5 dessertspoons of corn flour with milk and add to saucepan, mixing the mixture constantly so as to stop lumps forming. Lower heat so mixture is just making slow bubbles. You can add chopped parsley if you want.
This is also a good base for Leek and Potatoe Soup, use more water add cream instead of milk, cheese is optional as is thickening.
