What are some good and easy recipes to cook on a camping trip?

Or what do you cook in the great oudoors? My husband and I, along w.my 8yr old sister and 2yrold son are about to go camping for a week..We are mostly unpicky eaters but would like more ideas for lunch and dinner...thanks for any ideasWhat are some good and easy recipes to cook on a camping trip?
My dads favorite is ground hamburger diced/minced onions fried up in a cast iron pan, add a can of pork and beans and ketchup. I actually will crave this now and then. He also used to cook a lot of fish we fished when we camped so that was his main dish. try BBQ meets I don't know what kind of camp ground you are going to is it like a KOA, then BBQ steak roast hotdogs etc. if you can burn were you camp you can do the same things FOIL is awesome as a cooking utensil, wrapped potatoes in the coles same with corn on the cob, Sounds like fun wish I could go with you. Banana Boats

1 banana, unpeeled

semi-sweet chocolate chips

miniature marshmallows

brown sugar

Slit each banana lengthwise but not all the way through.

Leave the skin on (do not peel).

Put 1-2 tsp each of the marshmallows and chocolate chips in slit.

Sprinkle lightly with brown sugar.

Wrap tightly in foil, being sure to seal ends.

Place on grill over campfire or coals, seam side up.

Takes about 7 minutes to cook.
It's not lunch and dinner, but...

We like to bring Krusteaz pancake mix (the kind where you just add water) and zip-lock bags. You shake some mix into the bag, add water to get it to the right consistency, then open one end of the bag and squeeze it onto the griddle like you were using a pastry bag. It's SO easy, there's virtually no cleanup, you don't need to back a mixing bowl or spoon and when you're done with the bag it goes into the trash.
Take some cut up potatoes and green peppers and onions and put them in some foil to throw on the grill in a Reynolds Wrap ';tent';.They go good with whatever you decide to cook meat-wise.(Smells killer when cooking also) :)
Breakfast in a bag: in a lunch bag crack your eggs and put them in the bag along with your bacon. Fold the bag closed and poke a stick through it and cook it over the hot coals. You will have a tasty breakfast in no time and the bag doesn't burn!
hot dogs on a stick, you can buy one of those little grill things, and cook burgers, fish that you catch from a stream, also, roasting marshmallows and making smores is a wonderful treat for the kids. go to a camping store or call and ask if they have any ideas.

Catch a raccoon and cook it up nice and good over a roaring fire. Mmm mmm tasty!
beans
I make up a batch of spaghetti sauce and freeze it in freezer zip loc bags. All you have to do is thaw it out and cook the pasta.

Another one is stuffed round steak. You pound out the round steak and place Italian Bread Crumbs in a thin layer, the sprinkle Parmesan cheese, and then slices of provolone cheese. Roll this like a tube and tie with string. Cut into 3 inch circles (make sure you have the string on each piece !) and wrap each in saran wrap. Freeze. Cook on the grill for about 5-8 minutes each side. Serve with salad !
Grill some;

kabobs,(pre made)

shrimp

tuna steaks

corn on the cob

burgers and hot dogs

brauts

baked beans

frito chili pies

corn dogs

pork chops
take a can of corned beef hash with you.......great with eggs and easy to do over a campfire
For a no mess hamburger, try slicing a large sweet vidalia onion in half, gutting out the centers. You can save the scooped out onion parts for another meal or chop up and mix it in your hamburg meat. Make a patty with your hamburg and stuff it into the onion half then place the onion in your campfire. When the burger is cooked to your satisfaction, enjoy it and toss the onion shell into the fire!
When my kids were little they loved anything on a stick or in a pouch. It was just fun. You can do hot dogs of course, but you can do Kabobs with meat and veggies or pork chops on a stick or chicken breasts, or steaks, or shrimp. I always sent dad and the kids on a hike to find good green skinny sticks, while I got the food ready. When they got back dad and I whittled a point on to the sticks and threaded the meat on then everybody (with help of course) got to cook their own dinner over the fire.

Or I would make foil pouches out of double thickness of heavy duty foil and put the meat and veggies in the pouches for individual servings. And don't forget the S'mores!
