Need recipes to cook ahead and freeze?

Husband is working out of town, so to save us a little money I have been cooking meals all weekend and I freeze them. Some for him to take and some for me and the kids. The question is I need recipes...... Recipes that I can cook ahead and freeze, Im running out . Please help and I thank you in advance.Need recipes to cook ahead and freeze?
Tortilla Sandwich





Ingredients:


1 cup chicken pieces, aprox 1/4';


1/2 cup chopped onion


1/4 cup chopped capsicum


1/4 cup chopped french beans


1/4 tsp black pepper


Salt as per taste


1 cup grated cheese


1 tsp red chilli powder


1 green chillies, chopped finely


1 garlic crushed


4 corn tortillas (6'; in diameter)


1 tbsp butter


4 tsp salsa sauce


2 tbsp oil





Method:


Heat a pan with 1 tbsp butter


Add chicken pieces and cook till light brown, stirring continuously


Add onion, capsicum, french beans


Add pepper, salt, chilli powder and garlic


Cook chicken till brown


Remove from fire


Cut the tortillas into halves


Spread the mixture evenly on four parts


Top it with salsa sauce (1tsp each on each tortilla)


Finally garnish with grated cheese in 4 equal parts


Cover it with remaining tortilla halves


Heat a skillet with 2 tbsp oil


Put the tortilla sandwich on it


Let it shallow fry till golden brown


Turn and let the other side also becomes golden and cheese is melted


Serve with your choice of dip





Let them cool and then freeze. Ask your husband to reheat in microwave or on stove using a pan before eating.





Alu Paratha





Ingredients:


Wheat Flour - 200 gms


Jeera - 1 tsp


Chilli powder - 2 tsp


Turmeric powder - 1/2 tsp


Yoghurt - 3 to 4 tbsp


Cooking oil - 2 tbsp


Potato - 2 or 3 medium sized


Salt to taste





Method:


Boil 2 - 3 medium sized potato, remove skin and mash it.


In one bowl take 200 gms chapati atta. Add jeera, chilli powder, turmeric powder and salt. Mix it well.


Add mashed potato, mix it with 3 - 4 tbsp yoghurt, 2 tbsp cooking oil. Add little water to make a soft dough. Keep a side for about 15 to 20 minutes.


Make frying pan (Tava) hot on medium heat.


Take small ball from dough and roll it for a while. Then just apply a little oil by four fingers and fold it into half. Again apply little oil and fold it. It will get triangular shape.


Roll it in triangular way.


Place it on hot tava. When it gets little brown, apply oil or ghee. Turn it and again apply oil or ghee on other side. Keep turning simultaneously until it gets golden brown.





Hotdog Rolls with Marinated Veggies





Ingredients:


Thinly sliced:


1 carrot


1 radish1 cucumber


1 cucumber


2 onions


2 potatoes parboiled


1 beetroot


1 eggplant (brinjal)


1 tomato





For marinating:


1 tbsp. lemon juice


1 tbsp. white vinegar


1 tsp. pepper powder


1/2 tsp. dill leaves finely chopped


1/2 tsp. sugar


1 tsp. olive or other oil


salt to taste


1 green chilli (optional for spicy food lovers)





Other ingredients:


6 hotdog rolls


1 tbsp. butter


1/2 cup mozarella cheese grated





Method:





Mix all ingredients for marinade, keep aside.


If using green chill chop very fine before adding.


Keep beetroot slices, brinjals separately, keep tomatoes separately.


Arrange all other slices in rows in a tray.


Pour marinade over all veggies except tomatoes.


Keep aside for 2 hours.


Slit hotdogs into horizontal halves.


Place lower halves together, brush with a little butter.


Arrange all veggies in layers on these, inculding tomatoes.


Sprinkle grated cheese over veggies.


Brush the other halves also with butter.


On a baking sheet, arrange the lower halves and uppers side by side.


Bake in a hot oven for 5 minutes or till cheese has melted.


Dot veggies with ketchup, place back upper half over cheese.


Serve hot with fries, ketchup and coke.


Making time: 45 minutes (excluding marinating time)


Makes: 6 rolls


Shelflife: Fresh after baking. 2-3 hours after preparation if refrigerated. can be frozen for 3-4days





Variation:


The veggies may also be chopped fine, marinated together and tossed like a salad. This can be spooned onto the rolls and cover with cheese and top half. Proceed as above.





Note:


These rolls can be foiled cooked or directly cooked on a bar-b-que mesh, but tie a string so the veggies cheese do not fall out. Another option is to bar-b-que the veggies first and then put them in the rolls.

I think the most important question is: what freezes best? you probably already know the answer: lasagna dishes, meat (e.g. roast leftovers) and legumes (already boiled and seasoned to have as a salad) freeze well. Soups - stock etc are fine, but be careful with potatoes, which they release starch and become really bad. Casseroles freeze well. If your husband has the chance to microwave his lunch, another good idea would be to buy fish fillets, season them in small microwaveable containers, and freeze them raw, so that at work he can simply microwave his lunch for 5 minutes (fish cooks fast) - you could season the fillet with lemon, oil, capers, oregano and sundried tomatoes. Stuffed eggplant or peppers also freeze well - I normally stuff my veg with squash and onion (which you need to stirfry for 5 minutes at low heat) + tons of basil + egg, no cheese. Try also to come up with a balanced weekly menu: fish twice, meat once or twice, eggs once, prosciutto with salad once etc. Hope this helps!

My stepmom went to this tastefully simple thing where they make like 12 dinners or something -- put them in their little foil baking pans, covered and then put the baking directions on top so you can store them in the freezer and still remember what to heat them up at in the oven.





Some of them were really really good chicken recipies -- with rice, some with veggies, there's a ton. Basically any chicken recipe you find can be frozen. She also had lasagna, that's always a good one to freeze. If i can find the site with some of the recipies i'll edit my answer. They were SO good though, you couldnt even tell that they were frozen for however long.
I love Food Network's Robin Miller.You can go to the website and look for her. She has great recipes and tips that you can use everyday. Most of her recipes can be frozen for 3 months or kept in the fridge for 3 days.Just portion out what is for hubby and what is for you and the kids.
