I know Middle east folk make kebabs from ground lamb. But ground beef... I am keen to know. Looking for ethnic recipes with ground beef. Thanks to all who provided me with Mo bo dofu, the chinese way to make ground beef. It was great!How do people in the middle east cook ground beef? Recipes anyone?
I am half Iranian and we make a popular dish called Chello-kabab.
You mix the ground beef with finely diced onion, lime juice, salt and pepper. Cook on the grill over charcoal along with small whole tomatoes and serve with basmati rice. I never measure. If you like onion...put in all you want. The juice of one lime should be enough. I sometimes cook this in the oven on broil, but it is best on the grill. We sprinkle ground sumac over the meat and rice. This is a very sour, dark red powder that you might be able to get at an asian market or order online.How do people in the middle east cook ground beef? Recipes anyone?
Add about a teaspoon each of cinnamon and allspice, 1/2 ts of nutmeg and black pepper. Salt to taste and saute with a finely chopped onion. This is the base of rice stuffing, kibbe, Arabic style samosas...
I thought cows were sacred in the middle east
There are many countries in the Middle East. But I went to a local market and ate some very large meatball looking food. When I started eating it, I found an assortment of vegetables inside, that had been sauteed. I don't know the name of the dish; but I did watch a lady prepare the food
But the meat is not actually ground up like USA hamburger; it is more chunky than ground beef and more tender. The beef fat is used for other dishes.
HI I am from Persia, we roast at first onion until it reaches a golden color than add to it some turmeric and finally add the meat with some tomato paste salt and pepper and some fresh lemon juice and just a knife tip Cinnamon!
